Chicken Parmigiana
Chicken Parmigiana
Ingredients
- 1 cup of almond flour
- 1 egg
- 1 tablespoon of Dijon mustard
- 1/4 teaspoon of sea salt
- 1/2 teaspoon of dried dill
- 1/2 teaspoon of dried oregano
- 1 pound of chicken breasts, sliced thinly
- 1 cup of tomato sauce
- slices of cheese (Havarti, Parmesan, provolone, or some combination; mozzarella can be used if you’re not following SCD)
- 3 to 5 tablespoons of olive oil (or possibly more)
Preparation
- Combine the chicken fillets, egg, and mustard in a bowl and blend well.
- In another bowl or plate, combine almond flour, seasonings, salt, and blend well.
- In a large frying pan, heat the olive oil on a medium setting.
- Dip each chicken fillet in the flour mixture, then place in the frying pan.
- Fry chicken fillets on both sides (about 5 minutes on each side).
- Preheat an oven to 375 degrees F.
- Place chicken fillets in a baking dish and place tomato sauce over the chicken.
- Layer the slices of cheese, in pieces, over the chicken.
- Bake for about 15 minutes, or until the cheese starts to bubble

Turkey Bacon and Broccoli Casserole
This is to die for! (photo prior to baking...)
There is not one ingredient in this recipe that I do not love. But what I love even more is how EASY this is to make.
Ingredients:
4-6 cups of broccoli florets (cut up first into bite size pieces before you measure it out)
1/2 cup lite mayonnaise
1/2 cup lite sour cream
8 slices cooked turkey bacon cut into bite size pieces
2 cups shredded cheese of your choice (I used sharp cheddar)
chopped fresh scallions
Steam broccoli until tender. Drain and cool. Once cooled, mix with 1/2 the bacon, 1 cup of the cheese, mayo and sour cream. I found the broccoli to be mash-able with a fork at this point and choose to do that. Put into a lightly greased baking dish (I use a non-stick spray). Top with the rest of the bacon and cheese. Cook at 400 degrees for 12-15 minutes or until cheese is melted. Top with chopped scallions and ENJOY!!!!!
Serves 6-8.

Suffering No More!
Finally, pain and nausea free! I have been on a roller coaster of diets, weight loss, weight gain and more dieting; but NEVER free from belly discomfort or the feeling of nausea the entire time I was doing this. I had at some point or another eliminated eggs, dairy, eggs AND dairy, red meat, and anything else you could think of. And still the suffering continued.
Then I started reading about the elimination of grains...ALL grains. I don't have Celiac or Crohn's Disease, nor do I have irritable bowel syndrome. What I have is a body that refuses to like and properly digest grains.
Eureka! What other people have been doing for years (actually, millions of years...) I finally decided to try myself. I started reading some great blogs in my search for recipes and came across so much information that I was overwhelmed. I decided to give it a shot.
One full week into this and I've lost 5 pounds. Seriously. Without trying. Sure, it's probably water weight, but still...weight is coming off instead of gluing itself to my body. Really nothing has changed except for the fact that I eliminated GRAINS! And NO MORE BELLY DISCOMFORT!
I'm not a chef but I do like to cook. Hence, the cookbooks I love are posted. What I'd like to do with this blog is share what great info I have found with the rest of the people who wish to do be grain free. So I hope you all enjoy as I keep posting new info for all of us who have become Grain Free to be Me!
